We’ll have Lemon, Tarragon Tuna Wraps.
1 can solid or chunk white tuna
1 celery rib finely chopped
3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1 tablespoon freshly chopped tarragon
1 tablespoon capers
1 tablespoon herb flavored vinegar
freshly ground black pepper
finely chopped lettuce
black pepper mustard (or other robust mustard)
sandwich wraps or bread
To make the Lemon, Tarragon Tuna Wrap drain the tuna and place it in a bowl. Drizzle it with the fresh lemon juice, olive oil, and vinegar. If you don’t have an herb vinegar substitute white wine vinegar. Add the capers, tarragon, celery and pepper. Begin to break the tuna up with a fork, mixing all of the ingredients. Once you have everything evenly incorporated taste it to check the seasoning and moisture. You may need to add more olive oil or lemon juice.
Once you’re satisfied with the flavor of the tuna, lay out a sandwich wrap and spread it with black pepper mustard (recipe in The Tasteful Muse, Volume Two). Evenly lay out the tuna over most of the wrap, leave the final 1/2 inch empty. Sprinkle lettuce on the tuna and roll tightly.
