Roasted butternut squash tossed with black beans, tomatoes, and onions for a great one dish meal.
Peel and cube a butternut squash (or any other winter squash). Place the cubes in a large mixing bowl and toss them with olive oil, sliced onion, chopped jalapeño (optional), ground cumin, ground oregano, freshly cracked black pepper, and dash of smoked paprika. Add a drained and rinsed can of black beans, or any other type of bean (substitute homemade if you can).
Remove it from the oven and let it cool just slightly, serve it in tortillas, lettuce leaves, on a bowl of quinoa, or on top of chopped lettuce. I like to sprinkle mine with freshly chopped tomatoes, but if you prefer add them to the mixture before you roast it.
