Here’s a simple muffin recipe that will only dirty one mixing bowl! They are hearty enough to be breakfast and easy on the sugar.
Oatmeal Blueberry Muffins
In a large mixing bowl combine:
3/4 cup oats
1/4 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup whole wheat flour
To that add:
1 beaten egg
1 cup milk
2 tablespoons of very soft butter
Use a spoon to stir the mixture until everything is incorporated. Then add a cup of blueberries (or other fruit), fresh or frozen.
Spoon the mixture into a 6 muffin pan, top each muffin with a sprinkle of sugar and a dash of cinnamon. Bake at 425 degrees for about 20 minutes. Serve as soon as they are cool enough to handle but be careful, the blueberries stay hot for a long time!
