Roasted to Golden


These delicious little fungi are delicious, versatile, and super easy to make.

For oven roasted mushroom, clean and trim mushrooms as needed. You can use any variety of mushroom and you can roast them whole or halved. Place the mushrooms in a large mixing bowl. Drizzle them with olive oil and seasoning. Depending on the intended use I may season them with freshly cracked black pepper, red pepper flakes, whole garlic cloves, smoked paprika, or madras curry powder.

Toss them until they are evenly coated with olive oil and your seasoning. Lay them in a single layer on a baking sheet. Roast them in a 400 degree oven, shake the pan to turn them a few times, and roast them until they are a deep golden brown.

Eat them right away as a side dish, add them to pastas, soups, salads or stews, slice them and use them to top a grilled steak, or slice them and place them on a grilled cheese.
