The very best thing about pasta is it’s versatility! Whatever you have in the pantry or refrigerator can probably be combined into a delicious pasta dish.
I had ground pork, tomatoes, onion, mushrooms, garlic and pasta. From the garden I added basil, oregano, and rosemary.
Cook the ground pork with chopped onion and garlic, add some freshly cracked black pepper and any other dried spices you like (red pepper flake, etc.). As the meat cooks, continue to break it down in to smaller pieces. Once the onion is soft add chopped mushrooms, chopped tomatoes, chopped basil, chopped rosemary, and chopped oregano. If you don’t have the fresh herbs use dried.
As the mixture simmers cook some pasta. Drain the pasta while it is still al dente. Add the meat mixture to the pasta, stir and serve it topped with freshly grated hard cheese.
Don’t get hung up on a recipe with your pasta, get hung up on creatively using what you have!
