When Irish Oats Are Smiling

There’s an easy way to make a fresh, hot, delicious breakfast that takes zero effort in the morning. Well, I guess you do have to put forth effort to scoop it into a bowl!

Steel Cut Oatmeal (Irish Oatmeal) is not only delicious but also good for you. But they take a long time to cook so make them overnight.

In a mini-crock pot put the following:
1/2 cup steel cut oats
1 3/4 cups water
1/2 cup chopped fruit (dry or fresh)
1/2 cup chopped nuts (optional)
2 tsp cinnamon
Stir and let it simmer for about 8 hours.

I used a combination of dried blueberries and dried apricots with chopped pecans. And I also added a few tablespoons of flax seeds. The house was filled with the delicious scent of cinnamon and fruit, it was a great way to wake up.

Fresh fruit can be used in place of the dried fruit but you may need to adjust the water. I suppose you could add sugar but why? The fruits add plenty of sweetness. You can also serve it in a larger bowl and drizzle a little milk on it to make it creamy.

I think next week I’ll try fresh raspberries and filberts!
