Kumquat Jalapeño Marmalade


What do you do when your neighbors kumquat tree produces more kumquats than they can use? Make marmalade of course!

Clean and remove the stems and seeds from a few pounds of kumquats. In a food processor chop them and a few jalapeños, until you have a fine mush. You can leave the jalapeños out but where’s the fun in that? Place the mixture in a large pot and cover with water, add a cup of sugar and brig it to a boil. You’re going to simmer this mixture until it thickens, this will take close to an hour. Stir and taste the mixture frequently, adjust the sugar to suit your preferences. Let the mixture cool and store it in the refrigerator in jars.

If you do add jalapeños, and you keep the sugar to a minimum, you’ll end up with a delightful tangy citrus flavor with a slight kick. But even if you go for an all out sweet marmalade it will have a superb citrus flavor.
