I made a HOT mustard this weekend. It’s a smoked paprika and single malt scotch mustard. For me it’s a little to hot to eat on a sandwich. What do you do with hot mustard? Slather strips of beef, wrap them around a chunk of apple, skewer them, and grill!
The beef is hearty enough to balance the heat of the mustard, and the sweetness of the apple was a delicious way to round out the flavor. The recipe for the Single Malt Smoked Mustard will be in The Tasteful Muse, Volume Two (available in August). Until then use your favorite hot mustard and try wrapping beef strips around apple. I think you’ll enjoy the hot/sweet combination.
