Where’s Waldorf?

Not here! This is about the celery!

celery-salad_3676Celery, I admit it, I like it. It seems like one of those foods that people love or hate. It’s versatile, crisp, fresh, great in the summer! I wondered if I could make a salad with celery as the base. Here’s what I came up with.

Slice three ribs off celery and place in a mixing bowl, add a small amount of minced purple onion, about half of a an apple (chopped), and some minced basil. For the dressing I mixed plain Greek yogurt, pesto, and mango chili vinegar. Drizzle a small amount of the dressing over the apple and celery and stir until well mixed. You can get the recipe for the pesto dressing in The Tasteful Muse, Volume Two. Or use a bottled dressing that you enjoy, I recommend a blue cheese dressing.

I served the salad with boiled eggs and kale to make it a complete meal.
