Potato Salad Spears



Homemade potato salad is delicious! Often nothing like that purchased in the store. Homemade versions often have much more flavor and tend to be a little healthier. But the downside is the time, it’s a multi-step process: cubing, boiling, cooling, mixing. The solution… grilled potato salad. Why not? You probably have the grill on this time of year.

Use baby potatoes or cut full size potatoes into wedges. I prefer the trio of colored baby potatoes – red, white, purple. Place them in a bowl with small onions, I used mini cipolline onions, or chunks of bell pepper, and toss with olive oil, freshly cracked peppercorns, and an herb – chives, basil or oregano. Then skewer them in a decorative fashion. Grill over direct medium heat, turning a few times. Don’t let them brown to quickly, you need to cook the potato.

To serve them, place them on a serving platter and give them a fresh drizzle of olive oil and red wine vinegar, I used a homemade red wine vinegar flavored with roasted garlic and tomatoes.
