Here’s another summer salad, full of flavor and beautiful enough to turn heads at your summer picnics!
Cube and boil two sweet potatoes until tender, but remember they will continue to soften for a few minutes after removed from the heat so don’t overcook them. Drain and cool them, and them toss them with chopped purple onion and chopped Serrano chilies. Mix equal portions of fresh lemon juice and olive oil, about 4 Tablespoons of each, add fresh cracked pepper and chopped chives and basil. Probably about 3 Tablespoons of chopped herbs. Drizzle the dressing over the potato onion mixture and stir it to evenly distribute the dressing and vegetables and it’s ready to serve. The combination of the sweet flavor from the potatoes and the slight heat from the Serranos is delicious. It’s best served cold and don’t hesitate to make substitutions with both the vegetables and dressing.
