Today’s layers from bottom to top: Green leave lettuce, cucumber, radish wedges, green bell peppers, carrots, more lettuce, and flaked tuna. Ummm yes, the tuna was left over from grilled tuna steak with tarragon the night before. The lettuce was tossed with a lemon vinaigrette and the top was garnished with citrus wedges and chopped chives.
Admit it, you never would have known the tuna was leftover if I hadn’t told you! This layered salad was a great one dish dinner and we never turned the oven on!
