When it’s hot do you ever prepare meals entirely outside, on the grill? It’s easy to grill ribs, chicken, steak, or chops. Add a few ears of corn or potatoes and you’ve got a meal. But… how about dessert? Try grilling a variety of skewered fruits. If you alternate the colors on the skewers they can be quite striking. For those of you that are daring, try adding a few jalapeño slices. Your more daring guests will enjoy the combination of sweet and hot.
For these grilled fruit kebobs I altered chunks of pineapple, watermelon, honeydew, banana, jalapeño, and fresno chiles. You’ll want to grill them over indirect, medium heat. Try to turn them only once, and carefully, as they are fragile. I tend to use whatever fruit I have on hand. Others that grill well are apples, strawberries, grapes, peaches, nectarines, and mangoes.
They are perfect fresh off the grill but if you want to serve them with a sauce try a balsamic reduction, or a poppy seed vinaigrette, or perhaps vanilla yogurt with honey drizzles. You can’t beat the presentation and you won’t even have to turn the oven on!
