Gazpacho, Mexican Style

Mexican Gazpacho 2191Beware, this is a cheater recipe! I still have a few cans of V-8 floating around the pantry. It is not a pleasurable drink for me but it DOES make an excellent gazpacho base. I wanted this soup to go with the Jalapeño Lime Roasted Chicken so I gave it some Mexican flair!

Cut a seeded and peeled cucumber into chunks and place them in a blender with some jalapeño or fresno chiles, onion, and roasted garlic. Adjust the amount of each ingredient based on your tastes. Add some ground cumin, Mexican oregano, and a dab of smoked paprika. Use the blender’s pulse setting to begin chopping the vegetables, add a can of V-8 and blend. The amount of V-8 will depend on how many vegetables you have, and how thick you want your soup. Toward the end of the blending add some chopped tomato and cilantro. Blend until smooth, chill thoroughly and serve!
