PJ Salsa – Divinely Hot, Devilishly Good!

This is one of the easiest and best salsa recipes I know. Grill pineapple slices and jalapeños. Remove the tops from the jalapeños and the skin from the pineapple. Either chop the pieces by hand into small chunks or place them in a food processor and pulse until they reach your desired consistency. The ratio of pineapple to jalapeño is entirely up to your taste and how hot your jalapeños are. Add a little lime juice and enjoy! It’s sweet, hot, and addictive.

Place a tuna steak on a large piece of foil. Spread the salsa on the tuna and drizzle with about an half shot of tequila. Seal the foil and place the steak in a baking pan. Roast it at 325 degrees for 45 – 60 minutes (depending on the size). Remove from the oven and serve.

tuna-pj-salsa-done_2516As you can see this will be an incredibly juicy steak! Serve it hot the first night and use the leftovers to flake on a salad or make a sandwich. Although it works well on crackers with cheese too!

The ratio of pineapple to jalapeño is entirely up to your taste and how hot your jalapeños are. For this batch I used 11 jalapeños to 1.5 medium pineapples. But it varies as much as the heat in a jalapeño varies.
