Preheat oven to 450 degrees.
Cut a small slit in the side of each fresh fig.
Stuff a small piece of cheese into each fig, I used truffle cheddar.
Wrap in a piece of prosciutto.
Bake for about 6 minutes. Watch them closely, the goal is to just warm the fig and the cheese while the prosciutto gets crisp. The figs won’t stand up to over cooking.
Try and eat just one, I dare you!
Or if you don’t want to bake your figs try this……
Slice them cross ways, place a small crumble of your favorite blue cheese on them and drizzle with balsamic vinegar. I bet you can’t eat just one of these either! No matter what you choose to do with them… enjoy the fresh figs while you can!
